Red & Tonic® is a red wine aromatized with cinchona bark. It comes as the result of an intuition of two winemakers, Umberto Valle and Enrico Rovero, the latter also experienced distiller. Starting from the Piedmontese tradition of vermouth and cinchona’s aromatized wines – just think of the Barolo Chinato – Umberto and Enrico have thought of a style of aromatization of wine that allows an extreme versatility in the preparation of cocktails, in addition to the classic use as “meditation wine”.
Red & Tonic® is the result of the blend of Sangiovese wine produced in Tuscany, in the area of production of Morellino di Scansano d.o.c.g. wine and infusions of cinchona calisaya bark and a mixture of aromatic spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which make up our recipe, whose complete formula we wish to keep secret.
The herbs and cinchona have been infused separately in alcohol and the extracts thus obtained have been blend with the Sangiovese wine together with an addition of sugar, to achieve the optimal balance between sweet and bitter components.
The blend is placed in small barrels of European oak for about three months to achieve the perfect fusion between the different components.
After bottling this wine can age for over 20 years!
